The Chef

Keith Lamanna‘s versatility is evident in the multiple talents he brings to the field, as a chef and food service director.

He discovered his culinary identity at the age of 14, helping out as a cook at the local Kentucky Fried Chicken restaurant, up the street from where he lived. Following his graduation from high school in 1978, he enlisted as a student in the prestigious Culinary Institute of America in Hyde Park, New York, where he excelled and finished in the top echelon of his class.

Following his graduation from the CIA in 1980, he worked at various high end restaurants, private schools and assisted living facilities. He also opened a successful restaurant and catering facility with the help of his loving family. Acquiring his position as Executive Chef and Food Service Director at Fairview Farm Golf Course in 2005, he brought his unique talent to combine innovative food with inviting hospitality.

Keith’s philosophy is very simple: when planning a menu, always know the needs of who you are serving and always cook with the freshest and most wholesome ingredients available.

Keith also shares his knowledge and enthusiasm for food while interacting with his staff and guests at Fairview Farm. He can be routinely seen on Fairview’s spacious patio visiting with guests or in the kitchen lending a helping hand where ever needed.

Scents of food stir up childhood memories…..cooking for and feeding someone is one of the sweetest gestures in the world…… even watching someone eat can be a delight.  Food is and always will be my passion!”
